Mario Carbone and Rich Torrisi's Italian-American restaurant on the Promenade level at ARIA
Carbone opened on the Promenade level at ARIA in October 2015, the Las Vegas room from chefs Mario Carbone and Rich Torrisi, who opened the original on Thompson Street in New York's Greenwich Village in 2013. The concept pays homage to the Italian-American restaurants of the mid-20th century, an era of glamour, showmanship and tableside service, and captains still work the tables here.
The menu is the Italian-American canon, and the dishes that made the New York original famous made the trip: Spicy Rigatoni Vodka, Veal Parmesan and Lobster Fra Diavolo. Caesar alla ZZ, Octopus Pizzaiolo, Chicken Scarpariello and a Whole Branzino sit alongside them, steaks and chops are grilled over charcoal, and a rum cart of rare bottles from around the world closes the meal.
The restaurant seats 259. For groups, the Parlor Room seats 50, the private dining room seats 40 and splits into two rooms of 20, and the semi-private White Room seats 30. The dress code is business casual, with no tank tops, swimwear or open-toe shoes, and diners must be 6 or older. For later, CATCH is also at ARIA and Jewel Nightclub is inside the same resort.
