Catch Las Vegas opened at ARIA Resort & Casino in 2018, the Strip outpost of the seafood and sushi restaurant that began in New York's Meatpacking District in 2011. The room was designed with Rockwell Group, and the menu is built around seafood, sushi and steak, set to what the restaurant calls glamour and late-night energy.
The signatures are the Catch Roll with crab, salmon and miso-honey, the Truffle Sashimi of tuna and hamachi with chili ponzu, caviar and black truffle puree, and the Wagyu Fried Rice. The Hellfire Roll pairs spicy tuna two ways with pear and balsamic, the sushi program sources fish from Tokyo's Toyosu Market, and Japanese A5 wagyu is cooked tableside on a hot rock. Cantonese lobster with sake, oyster sauce, scallion and garlic anchors the larger plates, and a tasting menu runs through the signatures for the whole table.
The bar leans on martinis, from the Catch Filthy Martini to a Lychee Saketini, with sake and wines by the glass that run from Veuve Clicquot to Caymus Cabernet. Dinner is served nightly from 5pm to 10:30pm, and after 10pm the restaurant and lounge are 21 and over.
