The high-energy modern Mexican room, more scene than most of the list but a genuinely fun, very good night out. Plant-forward plates and serious steaks share a menu built for a table that wants to order big. Casa Playa (Encore)
Wynn's coastal-Mexican room at Encore, and the most refined Mexican dinner on the Strip: a lighter, seafood-forward take done with the Wynn service standard, in a room that feels like a getaway. Cantina Contramar (Fontainebleau)
The Las Vegas outpost of Contramar, the landmark Mexico City seafood restaurant, at the Fontainebleau. Coastal Mexican cooking with real pedigree: the tuna tostada and the pescado a la talla that made the original famous, in a bright, modern room. Javier's at Aria is the classic, clubby Mexican room on the Strip, known for its guacamole, its margaritas, and a carved-wood dining room that stays packed. It is one of the tougher Mexican reservations in town, so book it directly and book it early.
La Mojarra Loca Grill (off-Strip) is the local winner: the off-Strip mariscos spot the city actually drives to for real Mexican seafood, away from the Strip prices and the scene. If you want the honest version rather than the design-forward one, this is the move. Book it directly.
