Cantina Contramar at Fontainebleau is the first Las Vegas location of Contramar, one of Mexico City's most famous restaurants and the seafood room that made chef Gabriela Camara's name. In CDMX, Contramar is a midday institution, a long-lunch dining room whose kitchen puts seafood above everything else.
One plate carries the name: the whole grilled pescado a la talla, served split half-red and half-green so a single fish arrives in two treatments at once. The tuna tostadas are the other signature, and both make the trip north to the Strip intact, the pescado still built to be shared across the table.
In Las Vegas the room serves dinner only, every night from 5pm to 10:30pm. The menu opens with ceviches, aguachiles, raw shrimp and fresh or broiled oysters, moves through tostadas, fish tacos al pastor and a sope topped with caviar, and saves the pescado a la talla and a dry-aged tomahawk for the section built for sharing, served with handmade corn tortillas from the comal.
Architect Frida Escobedo designed the space, and it keeps the lively feel of a cantina. Upscale casual attire is required, and children must be at least 5 to dine.
