LAGO opened at Bellagio in 2015 and sits on the lake level, where arched windows look straight onto the Fountains. The format is built for sharing: small and mid-size plates that arrive as they are ready rather than in strict courses, which suits a long morning as much as a full dinner.
The menu looks inland and north rather than to the coast. Whipped ricotta with fennel pollen and honey comes from Emilia-Romagna and prosciutto di San Daniele from Friuli, while the endive salad with gorgonzola is a nod to Lombardy. Pizzas run to the Spicy Pepperoni, which takes its heat from Calabria. Pasta covers pappardelle Bolognese and bucatini carbonara, and among the larger plates are eggplant Milanese and a Piedmontese ribeye.
Brunch runs every day, 9:00 AM to 2:00 PM, which is the part of the service most guests overlook at a fountain-side address. Lounge seating takes over for lunch from 2:00 PM to 5:00 PM, and dinner runs 5:00 PM to 10:00 PM. On Friday and Saturday the room stays open until 1:00 AM.
