Mizumi sits near the main entrance of Wynn Las Vegas, surrounded by gardens, a koi pond and a 90-foot waterfall. It opened in 2012 in the former Okada space and was renovated in 2023, and the dining room pairs contemporary Japanese architecture with natural wood and stone sculptures. Executive chef Jeff Okada Ramsey, who joined in 2024, leads a kitchen that covers sushi, robatayaki, teppanyaki, kaiseki and omakase, with fish arriving daily from Japan.
The menu is served family-style. Sushi runs from nigiri and sashimi to the Hon Maguro Zukushi roll and A5 Wagyu nigiri with golden osetra caviar, and three-week dry-aged bluefin chutoro and otoro are sold by the piece. The robata grills beef tenderloin, Chilean sea bass and a mixed platter, and the tempura section includes Japanese snapper and Maine lobster. Purebred A5 wagyu from Hokkaido and Yamagata is served by the ounce, alongside an extensive sake collection. Teppanyaki is booked separately, in its own room.
Dinner runs 5 to 10 p.m. Sunday through Thursday and until 10:30 p.m. on Friday and Saturday. Sansui, the four-table terrace beside the waterfall, is by request only with a $175 per person food and beverage minimum. Dress is upscale casual chic. XS and Delilah are on the same resort.
