Mizumi at Wynn is the property's signature Japanese restaurant and one of the few Strip restaurants where the kitchen runs traditional Robatayaki, Tempura, and Sushi as three coequal programs out of the same pass. The room opened with Wynn in 2010 and underwent a 2017 expansion that added the koi pond and the 90-foot waterfall garden dining patio (the patio is reservable in Wynn's mild-weather months and is one of the most romantic exterior dining rooms in Vegas).
The kitchen runs separate stations for Robatayaki (Japanese open-flame skewer cooking over Bincho-tan white charcoal, which burns 1,000 degrees hotter than standard charcoal), Tempura (an actual tempura counter with seat-side service), and Sushi (a 10-seat omakase counter run by Chef Devin Hashimoto).
