Quince occupies a restored colonial house on Ky Con in Ben Thanh, and it built its name on wood-fired cooking: charcoal grills and a wood-fired oven anchor the kitchen, and the menu runs modern dishes grilled, smoked or oven-baked over those fires. It has been open since 2018.
The open kitchen faces a copper counter, and that is the seat to ask for if you want a direct line of sight to the fire work; the tables further back are for everyone else. A private dining room is available on request for a group that wants the meal to itself.
Above the restaurant sits Madam Kew, a 1950s-styled cocktail bar with a street-facing balcony, so dinner here has a natural second act in the same building without a car.
Quince serves dinner daily from 17:30, with last order at 21:45.
