Anan holds one Michelin star and was the first restaurant in Ho Chi Minh City to be awarded one, a distinction it has held since the guide's first Vietnam edition. It sits at 89 Ton That Dam, in a narrow building rising out of one of the last working wet markets in central Saigon, and the setting is inseparable from the cooking - the market supplies the kitchen and the kitchen answers to it.
Chef Peter Cuong Franklin's food takes Vietnamese street dishes and rebuilds them at fine-dining scale without abandoning what they were. The restaurant has also appeared on Asia's 50 Best Restaurants, a combination few rooms in the region hold at once.
The building runs across several floors: a ground-floor dining room, the Nhau Nhau cocktail bar above it, and a rooftop, so an evening here can move upward instead of ending at the table.
Service starts at 17:00 and runs late, closed Mondays. Anan takes reservations by email, and the dining room is small enough that two weeks ahead is a realistic window for a weekend table.
