Esta Saigon describes itself as a live-fire Asian fusion restaurant, and the design is literal: Asian contemporary cooking over wood and flame, drawn from Vietnam's terroir and the seasons. It is selected by the MICHELIN Guide in Ho Chi Minh City. It now trades at 24/24 Dong Du, in the ward that used to be District 1.
The space divides into four. Bar seats suit a drink and a few light plates. Counter seats face the live fire, close enough to follow each pass. The main dining hall carries the bulk of service, and a private room closes off for a group. The register is casual-fine: refined cooking, no formality attached.
Ordering runs a la carte or as a curated tasting menu, with a wine list picked for pairing. Dishes on the set menu have included Ehime shima-aji with fermented lemon and Hokkaido tomato, Ca Mau crab with fermented chili and a Vietnamese hollow donut, and smoked eel chawanmushi with foie gras and Korean abalone. A 7 day air-dried mallard arrives with duck leg sausage and mac khen duck jus; dessert has run to banana tarte tatin with coconut molasses ice cream. A sharing set for six is available when it is ordered 24 hours ahead.
Doors open at 18:00 every night and the room closes at 23:00, with the last seating at 20:30, so this is an early-evening booking, not a late one.
