Maroon at SAHARA: Inside Kwame Onwuachi's First Vegas Restaurant

The most consequential new Strip restaurant of 2026 opened on a Tuesday in late April. Maroon by Kwame Onwuachi sits at SAHARA Las Vegas at the north end of the Strip, in a 125-seat dining room with a bar-lounge and a private dining cluster, anchored by a custom jerk pit and an open hearth. It is the first Strip flagship from a Black chef in Vegas history. It is also Onwuachi's first restaurant west of the Mississippi, after Tatiana in New York and the Family Reunion projects that put his name on the James Beard map.
We have been watching the reservation curve since opening night. The room is finding its weekly rhythm and the booking patterns are settling. Here is what we know about Maroon, what to order, and how to time a reservation in the first six months of service.
Who Kwame Onwuachi is and why this opening matters
Kwame Onwuachi is a James Beard Best Chef winner, a Food and Wine Best New Chef, and the chef-author behind the Notes from a Young Black Chef memoir that opened most Americans up to his story. He grew up in the Bronx, spent his early career in fine dining kitchens including Per Se and Eleven Madison Park, and built his name with Kith and Kin at the Inter-American Development Bank in Washington DC before the move to New York to open Tatiana at Lincoln Center in 2022.
Tatiana made him the chef of the moment. The New York Times named it the number one restaurant in the city that year, the room booked out weeks ahead, and the food was reviewed as a generational reset on what fine dining could look like through an Afro-Caribbean lens. Maroon is the Vegas chapter of that story.
It also marks a historic first. No Black chef had opened a flagship Strip restaurant before Maroon. The Strip dining canon has been a parade of multi-property chains, French and Italian-American legacies, and big-name LA imports for thirty years. The Maroon opening is the first time a chef from the Onwuachi cohort has built a room from scratch on Las Vegas Boulevard.
What Afro-Caribbean steakhouse actually means
The concept is the question most guests come in with. Afro-Caribbean steakhouse reads as fusion-language but the kitchen approach is more specific than that. Onwuachi treats the American steakhouse canon as a base layer and overlays Caribbean spice work, live-fire technique, and protein cuts from the West African and Afro-Diasporic traditions.
The clearest read on the kitchen is the live-fire program. A custom jerk pit at the center of the open kitchen handles the chicken and goat. An open hearth handles the wood-fired ribeye and the strip cuts. The jerk pit is the dish that pulls food media coverage and is on the lid of every social post out of the room. The wood-fired ribeye is the steakhouse anchor.
Onwuachi's spice work is the connective tissue. Adobo butter for the ribeye finish. Green seasoning on the strip. A hot sauce flight that comes with the Wagyu cuts at the upgrade tiers. The wine list emphasizes Caribbean and African producers most American diners have not encountered, with a sherry list as the wine alternative for guests who want to drink through the spice progression rather than against it.
The signature dishes worth knowing before you book
The signature jerk chicken is the dish to order regardless of the rest of the meal. Half chicken, brined in scotch bonnet and brown sugar, finished over the pit charcoal. It comes with festival bread, cabbage slaw, and the house jerk sauce in a side ramekin. The most-photographed plate on the menu.
The wood-fired ribeye is the steakhouse anchor. A 22-ounce bone-in cut from the hearth, finished with adobo butter, sliced tableside. Plan a four-top around it.
The beef pattie with curry goat is the savory pastry course you split between two guests as a between-pour interlude. The plantain three ways (fried, mashed, glazed) is the side most regulars order to share across the table.
For dessert, the rum cake with brown butter ice cream is the closing showpiece. The pastry program leans on Caribbean dessert traditions executed at the same level as the savory line.
How to time a reservation in the first six months
Maroon opened the books in two phases. The opening month was reservation-only with a six-week lead time on weekends. The first wave of those reservations were food-media and industry tables. As of June 2026 the curve has flattened slightly. Friday and Saturday peak windows still go three to four weeks ahead. Tuesday through Thursday seatings are noticeably easier to book with the same menu and pacing.
The room runs warmer than most Strip dining rooms because of the live-fire kitchen. Leave the jacket at coat-check. Dress is smart-casual leaning elevated. The bar lounge accepts more casual attire and is the right room for a couple wanting the kitchen experience without committing to a full dinner course.
Group sweet spot is four to six. Smaller parties do well at the chef's counter where the kitchen sends what they want you to try. Larger parties go to the private dining cluster which is bookable separately for groups of eight to fourteen.
How we handle the reservation

What is not showing online does not mean it is not available; the public apps show what is left, not what is possible. The concierge submits your date, party size, and a note on any dietary requirement to the kitchen at least 48 hours ahead. The kitchen handles celiac and dairy-free without notice but a flag at booking helps the team plan around the menu structure. The team routes any specific dish requests (whole jerk chicken for the table, dry-aged cut preference, off-menu sherry pairing) and consolidates the all-in cost including tax and service before you commit.
For event weeks, booking 30 to 60 days in advance is ideal, and for New Year's, earlier is better. F1 weekend in November and Super Bowl weekend in February are the harder books. The opening-year calendar also includes a Restaurant Week appearance in September which typically opens up the lunch program windows for those specific dates.
Maroon is one of the few new Strip openings worth restructuring a trip around. The kitchen is operating at a level most new rooms take eighteen months to reach. The Onwuachi cohort is the most consequential American culinary movement of the last decade and Maroon is its Vegas chapter. Book the room while the reservation is still findable and before the food-media cycle catches up to where the cooking actually is.
