Per Se is Thomas Keller's three-Michelin-star tasting-menu room on the fourth floor of the Deutsche Bank Center at Columbus Circle, the New York destination you plan an entire trip around. Opened in 2004 as Keller's New York interpretation of The French Laundry, it is a special-occasion room where dinner unfolds at a leisurely pace.
The serene dining room, designed by Adam Tihany, puts the sightlines first, with views over Central Park and Columbus Circle. Beyond the main room there is a salon, and groups of eight or more can book one of two private dining rooms, including the West Room, which seats up to 66.
Chef and proprietor Thomas Keller and chef de cuisine Chad Palagi serve two menus each day, a nine-course chef's tasting and a nine-course vegetable tasting, built on classic French technique, with no single ingredient repeated through the meal. Oysters and Pearls remains a signature, and the grand dessert finale is a fitting close. The wine list runs to more than 2,000 bottles, with older vintages and wines from small producers released in limited quantities, and the Per Se Tonic and Gin is the house favorite among the cocktails.
