The Flatiron original - Michelin-starred Korean barbecue meets American steakhouse
COTE is the original Flatiron room of the only Michelin-starred Korean steakhouse in America, where tableside grills, in-house dry-aged beef, and a wine list of more than 1,200 labels share every table.
Proprietor Simon Kim opened it on 22nd Street in June 2017, joining the communal ritual of Korean barbecue to the hallmarks of a classic American steakhouse. Every table has its own gold-rimmed Shinpo grill fired with ceramic charcoal, so steaks char without a smoky mess, and much of the beef rests first in the restaurant's own dry-aging room. Heated outdoor cabanas offer a second setting beside the indoor dining room.
Chef de Cuisine Deegan McClung leads the Flatiron kitchen. First-timers order the Butcher's Feast, four selected cuts of USDA Prime and American wagyu grilled at the table with banchan, a savory egg souffle, two stews, and vanilla soft serve to close. Regulars add the Steak and Eggs, filet mignon tartare with caviar and milk toast, or the kimchi wagyu paella. Downstairs, Undercote is a subterranean cocktail bar that seats walk-ins only.
Reservations are handled through Resy for parties of two to six, opening 30 days ahead with each new day released at 10 AM, and larger groups book through the events team. The grill tables are designed for four or more, so smaller parties are seated at the first and last seatings of the night. Hours run Sunday through Wednesday 5:00 PM to 11:00 PM and Thursday through Saturday 5:00 PM to midnight.
