Maroon by Kwame Onwuachi opened at SAHARA Las Vegas on April 24, 2026, as the chef's first West Coast restaurant. Onwuachi, the 2019 James Beard Rising Star Chef of the Year, is best known for Tatiana in New York City and Dogon in Washington, D.C. He calls Maroon a Caribbean steakhouse, one that brings the history of jerk and Jamaican cooking to the traditions of the American steakhouse.
From the door you catch the smell of live-fire cooking and the glow of the custom jerk pit at the heart of the room. Jerk chicken, half or whole, comes off the pit alongside lamb chops and a pork tomahawk. The rum-aged steaks come from Rosewood Ranch in Texas, from a 30-day dry-aged New York strip to a 40-day dry-aged 34-ounce ribeye, and the rest of the menu runs from Maroon Patties with braised oxtail and Ossetra caviar to an oxtail Wellington for two.
Dishes are made for sharing and arrive as they are ready. The bar reworks classic cocktails with Caribbean flavors, such as the Blue Mountain Sour and the Kingston Colada. The space, designed by Modellus Novus, holds a bar-lounge, a 125-seat main dining room and private dining spaces, and dinner starts at 5pm nightly, until 10pm Sunday through Thursday and 11pm on Friday and Saturday.
