B40 trades on Tran Hung Dao in Ben Thanh Ward as a quan nhau house - the Vietnamese eating-and-drinking format where the food is built for a shared table and a long night. Doors open at 6pm and the kitchen runs through to 4am, seven days a week.
The draw is live seafood sold by weight. Grouper, pomfret, abalone, tiger prawn, squid and oysters are taken from the tank and cooked to order, and the kitchen will send the same fish several ways: grouper stewed in Hong Kong sauce, dia fish braised down with pepper, live pomfret either in that same Hong Kong sauce or dropped into a hot and sour hotpot.
Around the seafood sits the salt-fried register this kind of cooking does best - stir-fried salted frog, eel grilled in a Japanese sauce, baby squid steamed with oil, deep-fried chicken knee cartilage with shredded pork and salted egg. Beer, apricot wine and spirit packages come to the table alongside the food rather than after it.
