Cee's Eatery sits on Truong Dinh in Ben Thanh Ward, steak-led without being a steakhouse in the narrow sense. The kitchen organizes itself around process rather than around one cuisine - dry-aging, slow cooking, smoking - and the carte runs refined small plates into generous mains across dry-aged beef, pasta, wood-fired pizza and seafood. The room traded as C's Steakhouse before the rebrand.
The main dining room seats 40 to 45 and takes a full buy-out, with large windows onto the city and the open kitchen in view of the tables. Two private rooms sit off it: R1 for up to 14, retro-Hollywood in warm light, leather seating and an industrial-rustic edge; R2 for up to 16, framed by floor-to-ceiling windows and a city view. A bespoke menu can be built for either.
Out of the dry-ager come a grass-fed Black Angus rib eye sent as steak au poivre with cognac black pepper sauce and crispy onions, and a tomahawk held 45 days, MB6/7 wagyu on 450 days of grain, cut over a kilo for sharing. Elsewhere on the carte: grilled half Nha Trang lobster with linguini in seafood broth, 14-day dry-aged duck breast with fig and wild local berries, rigatoni with slow-braised beef cheeks under parmesan foam, and a lamb shank cooked 24 hours and baked in puff pastry.
