CLAY - Cocktails & Cuisine sits at the end of an alley in An Khanh Ward, still widely known as Thao Dien, on the bank of the Saigon River. A wood-fired oven is the center of the kitchen, and the menu calls what comes off it neither barbecue nor smoking but between the two: Mediterranean in character with an Asian turn, on local and seasonal produce.
The building runs to 900 square meters. Planting screens the entrance so the river only shows itself on arrival, and the dining space steps down toward the water so no level loses the view, anchored by a long central bar, an open kitchen and a display wine cellar. Stucco and wood sit against saturated reds and bamboo handcraft. A sculptural staircase climbs to an open rooftop for the sunset, edged by a low bench along the full perimeter and a meter-and-a-half band of planting.
The carte opens on cold cuts and French cheese, Nha Trang oysters and caviar, sashimi and seafood platters, then turns to the fire: flamed black cod cured in shio koji with miso beurre blanc, dry-aged French duck magret with parmigiano polenta, black ink spaghetti vongole with grilled half Nha Trang lobster, clay pot chicken with lemon, green olives and ras el hanout, and a 1.2kg Black Angus cote de boeuf flamed with black label whisky. Cocktails and wine carry equal weight, and DJs and live music play the room.
