Di Mai cooks regional Vietnamese home food and street-food technique in a contemporary dining room on Level 2 of Vincom Center Landmark 81. The house line - Vi Viet, Tinh Nha, or Taste Vietnam, Feel at Home - sets the framing: a family feast rather than a formal meal, ordered in platters for the middle of the table.
The design sits between the Vietnamese countryside and Indochine, with something of the old Saigon streets to it. The dining room works two facades, a dinner table built in the form of a tuk-tuk holds the middle as its focal point, floor staff wear restyled ao dai and the kitchen works in aprons cut from Vietnamese patterns.
Sourcing is specific and regional - Cu Chi beef, Ben Tre coconut heart, Phu Quoc fish sauce and peppercorns, Tay Ninh wild herbs, Tra My cinnamon, Lang Son star anise - and it shows on the plate. Steamed chicken is tossed with caramelized Phu Quoc fish sauce; snakehead fish is straw-grilled in the countryside manner; the house smoked ribs arrive with matcha sticky rice; the premium pho comes in a stone pot with six toppings on a 24-hour bone broth built on Cu Chi beef. Broken rice carries steamed scallop, pork skin and Iberico pork jowl, and the banh mi is filled with slow-braised beef stew.
