Square One is the main dining room of the Park Hyatt Saigon, on Lam Son Square directly opposite the Opera House and beside the Caravelle. It is one of the most central restaurant addresses in the city, on the square where colonial Saigon still reads most clearly.
The menu spans both French and Vietnamese cooking side by side, with Chef Arnaud Schuttrumpf leading the French side of the kitchen. That split makes Square One one of the easier rooms in the city for a group that cannot agree on a single cuisine, and a reliable choice for a business dinner where the food should not be the risk.
The room is large and formal without being stiff, in keeping with the Park Hyatt's general register - built for a quiet lunch as much as a proper dinner. The restaurant has held a MICHELIN Guide selection every year since 2023.
