Tales by Chapter · Restaurant · Saigon
Vietnam's newest Michelin Green Star, plant-based and zero-waste.
Tales by Chapter holds a Michelin Green Star, awarded in the 2026 guide - the guide's recognition for sustainable practice, distinct from a star for cooking alone. It is the newest Green Star in Vietnam and one of only three in the country. Chefs Truong Quang Dung and Quoc Hung lead the kitchen.
The kitchen is plant-based and runs a strict zero-waste policy, sourcing seasonally from its own farm and from a rooftop garden. That supply chain shapes the seasonal tasting menu, which changes with what the farm and the rooftop produce instead of following a fixed card, and guests can watch the kitchen counter work through the courses.
The room sits on Nguyen Thanh Y in Tan Dinh, in a quiet villa setting tucked off the main streets, and is deliberately intimate. It suits a dinner where the conversation is the point, not a room built for a crowd.
Service runs 19:00 to 23:00 daily, closed Tuesdays - not the three-night week sometimes assumed for a room this size. Reservations run through TableCheck. Given the room's size, this needs booking ahead of time, not fitted in at the last minute.
