Gilberto Cetina's one-MICHELIN-star Mexican seafood counter inside the Mercado La Paloma food hall.
Holbox is Gilberto Cetina's Mexican seafood counter inside Mercado La Paloma, a food hall in Historic South Central Los Angeles that houses eight restaurants. It opened in 2017 and holds one MICHELIN star in the 2026 California selection, as in 2025 and 2024. The name comes from the Mayan-named island of Holbox, pronounced hole-bosh, off Mexico's northern Yucatan Peninsula.
The room is the stall: Holbox occupies C9 in the market hall, and service is order-at-the-counter rather than a dining room with waiters. Cetina grew up in the same building: he learned to cook with no formal training at the family restaurant Chichen Itza, a neighboring stall, working alongside his father for 15 years.
The menu takes specialties from coastal Mexico through Southern California and Baja ingredients, and it changes daily with product and fishing conditions. Recent plates: a tostada de kanpachi, Baja ceviche under 20 grams of Santa Barbara uni, at $26; a smoked kanpachi tostada with shrimp, scallops, arbol-guajillo sauce and avocado at $12; erizo, live sea urchin with Baja bay scallops, $28; and ceviche mixto of wild Mexican shrimp, Yucatan octopus and halibut at $24.
The counter is open 11:30 am to 9 pm Tuesday through Thursday and Sunday, and to 10 pm Friday and Saturday. On Wednesdays and Thursdays the kitchen adds an eight-course tasting menu at $130 per guest plus tax and an 18 percent service charge, served at the counter at 6 pm and 8 pm with every guest served each course at once.
