Getting a table at Bestia is the first test. This is one of Los Angeles's hardest reservations - and has been since the night it opened in 2012. When Ori Menashe and Genevieve Gergis took over a vacant warehouse down a dimly lit alley at the edge of downtown, they were not following a trend. They were starting one. The Arts District dining scene that exists today traces a direct line back to what they built here.
The room itself does a lot of the work. Exposed brick, steel beams, raw concrete, and an open kitchen anchored by a wood-burning hearth give the space its industrial bones - but it never feels cold. It feels alive. Most nights the chatter fills the room faster than the playlist, and that energy is part of the point.
