The technique is modern, but the flavors stay rooted in traditional Colombian cooking. Regulars come back for the Torta de Chocolo y Tres Cerdos, a sweet-corn cake layered with caramelized pork belly, roast pig and shredded ribs under a blend of cheeses, and the Canasta de Bunuelos, crispy cheese fritters filled with shrimp cocktail and served with a shot of coconut lemonade and rum.
