Zombra sits on Carrera 40 in El Poblado and runs one of the most disciplined kitchens in Medellin. Chef Pablo Naranjo trained in Michelin kitchens in France and spent years cooking in India before coming home, and the menu is what happens when that background gets pointed entirely at Colombian produce.
The rule the kitchen sets itself is the interesting part: the ingredients are Colombian, close to exclusively, and the technique is not. Fermentation, smoke and long-built sauces carry dishes whose components mostly came from within the country, and the result reads as neither traditional Colombian cooking nor a European menu wearing local produce.
The room is deliberately plain and the plating is not. Grey walls, dark tables, and a service style that leaves the food to do the talking. It is a restaurant for people who want to concentrate, and it is a poor choice for a large celebratory group.
Service runs midday to 10pm Monday through Saturday and the kitchen is closed Sunday, which is unusual here and worth planning around. Lunch is the quieter service and the easier booking; dinner is when the full menu is running.
Book ahead. The dining room is small, the tasting menu is the reason most people come, and word has travelled well beyond Medellin.
