Chef Juan Jose Cardenas leads Carmen's garden-set Colombian flagship
Carmen was founded by Carmen Angel and Rob Pevitts, and it remains one of the most consistent tables in Medellin. Executive Chef Juan Jose Cardenas now leads the kitchen, and the cooking is contemporary Colombian, built to show off the country's biodiversity without ever tipping into a lecture.
The setting does a lot of the work. Carmen occupies an El Poblado townhouse where the architecture folds a garden into the dining rooms, split across a wood-filled bar, a lush conservatory and a leafy courtyard, with Bar Carmen handling an ambitious cocktail side built on Colombian spirits and produce.
Order the Caribbean crab and shrimp empanada with guanabana chili and vanilla aioli, the Meyer-lemon ceviche pulled from Pacific fish, and the Cerdo 2 Veces, a tamarind-glazed plate of pork belly and tenderloin. You can go a la carte or take the seven-course chef's tasting with wine pairing; either way the menu leans on named local farmers, fishermen and artisans, and the sourcing story is part of the pleasure.
It reads modern and warm, not stiff, which makes it as natural for a first night in the city as for a milestone dinner. Service is polished without being formal.
