Chef Carmen Angel's garden-set Colombian flagship
Carmen is the flagship of chef Carmen Angel and partner Rob Pevitts, and one of the most consistent tables in Medellin. The cooking is contemporary Colombian, built to show off the country's biodiversity without ever tipping into a lecture.
The setting does a lot of the work. Carmen occupies an El Poblado townhouse where the architecture folds a garden into the dining rooms - wood, exposed brick, greenery and light throughout. A Chef's Bar counter lets you sit close to the pass and watch the kitchen work, while Bar Carmen handles an ambitious cocktail side.
Order the blue-crab empanadas with guanabana sauce, the Meyer-lemon ceviche pulled from Pacific fish, and the Cerdo 2 Veces, a tamarind-glazed plate of pork belly and tenderloin. You can go a la carte or take the seven-course tasting; either way the menu leans on named local farmers, fishermen and artisans, and the sourcing story is part of the pleasure.
It reads modern and warm rather than stiff, which makes it as natural for a first night in the city as for a milestone dinner. Service is polished without being formal.
