Espiritu sits on the roof of the Novotel at El Tesoro, high on the Poblado hillside, and the position is the first thing that separates it from the rooftops down in Provenza. From up here you look across the whole Aburra Valley rather than at the building opposite.
The menu comes from Alvaro Clavijo, the chef behind El Chato in Bogota, which is one of the most decorated kitchens in Latin America.
