Espiritu sits on the top floor of the Novotel at El Tesoro, high on the Poblado hillside, and opened in 2024. From up here you look across the whole Aburra Valley, the dining room set with rustic interior finishes against those panoramic views.
The menu comes from Alvaro Clavijo, the chef behind El Chato in Bogota, one of Latin America's most decorated kitchens. Clavijo has described his own cooking as a record of what he picked up while working abroad: he lost his fear of ingredients in Spain, learned to cook in France, picked up discipline in the United States, and took Denmark's plating and aesthetic sense home with him. The cooking at Espiritu is Colombian at its root, produce-led plates from an open kitchen in a dining room built around the pass, and he builds his flavors around a careful balance of spice and salt. The pork shoulder in tamarind sauce, known on the menu as secreto de cerdo, is one of the dishes that has drawn attention since the restaurant opened.
It opens at midday and runs to 11pm every day, so lunch on the terrace is possible and is the quietest way to see it.
