Moshi is the sushi counter from the Carmen group, and it takes a purist's line: an eight-seat bar designed like a small Tokyo omakase room, where nearly everything is prepared in front of you. Chef Daniela Osorno Escobar runs it, and the intimacy is the entire point.
The difference maker is sourcing. Roughly ninety-eight percent of the ingredients come from Colombian fishermen and farmers, so the omakase is built around Pacific-coast catch rather than imported fish - a genuinely local sushi bar in a category that usually flies everything in.
The kitchen is proud that there is no cream cheese and no fried rolls in sight, a quiet statement of intent. Maki, nigiri, baos and ramen round out the a la carte side for a lighter visit.
With only eight seats, this is a book-ahead room and a front-row seat to the chef's work - closer to a chef's-table experience than a restaurant. It suits a couple or a pair of friends who want to watch the counter rather than a big group.
