Much of the menu passes through the Josper oven. The Ceviche Nissei brings white fish, octopus and shrimp from the Josper with a creamy egg yolk puree and leche de tigre. Conchas Josper finishes octopus and shrimp with a Nikkei compound butter and flambeed Parmesan, and Tataki Josper pairs grilled tuna with yellow chili, chalaquita, crisp cancha corn, avocado and sweet potato puree. The crispy rice is topped with fresh tuna, rocoto, truffle, crab and foie gras, and the salmon comes with truffled yuzu, glazed sweet potato, Ocana onion and avocado cream. From the land side of the menu there are wok-tossed edamame with sriracha and house furikake, a Caesar built on Josper-grilled Tudela lettuce with shiitake dressing and Grana Padano, and a house bao with crisp chicken and pickled onion.
Dinner runs 6 p.m. to 10 p.m. Monday through Friday, Saturday opens at 1 p.m. and closes at 10:30 p.m., and Sunday runs noon to 9 p.m. The dress code is business casual and the style of service is casual dining. There is no parking on site. Reserve through OpenTable.
