A small Provenza bistro from chef Jhon Zarate, since 2018
Sambombi Bistro Local puts the local in its name. It sits on Carrera 35 in Provenza and was founded by chef Jhon Zarate, who trained in kitchens including Gustu in Bolivia and Relae in Copenhagen before opening this small, unpretentious room built around Colombian ingredients and produce sourced close to the city.
The restaurant has been part of Medellin's dining conversation since at least 2018, when local food writers first singled it out, and it has since earned a place on The World's 50 Best Discovery list, a signal that the cooking is more ambitious than the low-key setting first suggests.
The room is intimate, not showy: a small dining space built for conversation, not a scene, tucked just off the busier Provenza strip. It suits a couple or a small group looking for a quieter, produce-led meal instead of a big night out. Because the space is small, a reservation is worth making ahead of a visit, especially for dinner.
