Bao's is a cocktail bar on the Little Venice waterfront in Mykonos Town, set behind sea-facing windows with the windmills across the bay. Tables sit at the water's edge under macrame parasols, close enough that the spray reaches the front row when the sea is up.
The bar takes its name from George Bao, the pirate who defended this shore during the revolution of 1770 from the small island still visible through the window, and it plays that rebellious streak for all it is worth. The cocktails are daring, and the music comes from all over the world, loud enough to dance to once the light goes.
The doors open at 10:30 AM, so the day starts with breakfast on the water and cocktails through the afternoon. Seaside tables turn toward the sunset from 5 PM, and at 8:30 PM a live saxophone plays over the water against the DJ as the last of the light leaves the bay. Later the room turns into a party, with the round Rotonda table beside the DJ booth and a champagne and bottle list behind the bar.
There is no formal dress code, though most guests dress up a little for the evening. The bar itself takes walk-ins, while seaside tables go quickly in season, so a table with the view around sunset is worth booking ahead.
