Michelin-starred, hyper-seasonal cooking on Main Street
Burdock & Co is chef Andrea Carlson's Michelin-starred restaurant on Main Street in Vancouver, and one of the more serious kitchens in the city. Carlson cooks hyper-seasonal, ingredient-driven food rooted in the Pacific Northwest, leaning on local farms, foragers and what British Columbia grows week to week. In 2022 she became the first chef to own and operate a Michelin-starred restaurant in Canada as a woman, and the star has held since.
The format is a multi-course tasting built around the Moon Menu Series, six seasonal menus that shift with the lunar calendar and the produce of the moment. The current chapter is Submerging Stones under a Sturgeon Moon, running through the late-summer weeks. A shorter bar menu of individual plates and snacks runs alongside it, with dishes like an Arctic sourdough with house-cultured butter and kasu-marinated, pickled ramson.
The room is small and warm, an intimate corner space with a handful of counter seats where you can watch the pass. It feels like a neighborhood table and a destination at once, the kind of seat Vancouver locals guard and visitors plan around.
