Burdock & Co is chef Andrea Carlson's Michelin-starred restaurant on a corner of Main Street in Vancouver's Mount Pleasant, and one of the quietly serious kitchens in the city. Carlson cooks hyper-seasonal, ingredient-driven food rooted in the Pacific Northwest, leaning on local farms, foragers and a near-obsessive respect for what British Columbia grows week to week. In 2022 she became the first chef to own and operate a Michelin-starred restaurant in Canada as a woman, and the star has held ever since.
