CinCin Ristorante and Bar is Robson Street's grande dame of Italian dining, a downtown Vancouver fixture since 1990 and an upscale, wood-fired kitchen anchored by one of the deepest wine lists in the city. It is the grown-up Italian room for a night that matters, with the service and cellar that come only from decades of doing it well.
The restaurant sits above Robson at 1154 Robson, a warm, high-ceilinged room built around the Grillworks Infierno, a two-meter wood-fired grill and rotisserie that gives the whole menu its signature smoke. Executive chef Andrew Richardson, a Newcastle native who trained under chef Terence Laybourne at the Michelin-starred 21 Queen Street before moving to Vancouver in 1999, cooks seasonal, market-driven Italian in rhythm with what is fresh.
His signature is the tagliatelle al ragu, a six-hour bolognese of veal, pork, pancetta and parmesan. Beyond it, look for the linguine with prawns, clams and Humboldt squid in white wine and calabrian chili, the ricotta gnocchi with pesto alla genovese and pinenut breadcrumbs, and the Alberta lamb rack with gnocchi alla romana and mint salsa verde. The wine program is the other headline: more than 1,000 labels on the list, with real depth in Italy, California and the Pacific Northwest.
Dinner runs Wednesday through Sunday from 5pm, with the bar open from 4:30pm and ready for a spontaneous glass and a few plates. In the downtown core, it makes a natural opener before the night moves on.
