Five Sails has held one of the best views in Vancouver since 1986, a dining room inside the Pan Pacific Hotel at Canada Place that looks out over Burrard Inlet, the North Shore mountains and Stanley Park. For years it leaned a little on that view, but under chef Alex Kim it has become a serious culinary destination again.
The dining room is classic special-occasion fine dining, with white tablecloths, floor-to-ceiling windows, and a wall of harbor and mountain that does half the work of the evening. Chef and Co-Owner Alex Kim, the 2025 Canadian Culinary Champion and a Top Chef Canada finalist born and raised in Seoul, cooks a produce-driven Pacific Northwest menu built on ingredients like Haida Gwaii sablefish, Dungeness crab, Vancouver Island oysters and produce from a Pemberton farm his team visits directly.
A multi-course tasting menu is the flagship experience here, built around whatever the season and the day's catch bring in, alongside a full table d'hote and a la carte. The card follows the province's seasons, so the plates change often.
