Five Sails has held one of the best views in Vancouver since 1986, a Coal Harbour dining room inside the Pan Pacific at Canada Place that looks out over Burrard Inlet, the North Shore mountains, and Stanley Park. For years it leaned a little on that view, but under chef Alex Kim it has become a serious culinary destination again.
The dining room is classic special-occasion fine dining, with white tablecloths, floor-to-ceiling windows, and a wall of harbour and mountain that does half the work of the evening. Culinary Director Alex Kim, the 2025 Canadian Culinary Champion and a Top Chef Canada finalist born and raised in Seoul, cooks a produce-driven Pacific Northwest menu built on the finest B.C. ingredients: Haida Gwaii sablefish, Fraser Valley dry-aged duck, Okanagan pear, and Pemberton
