Friulian cooking inside the Hyatt Vancouver Downtown Alberni, with pasta made fresh in-house daily.
Carlino is an Italian restaurant inside the Hyatt Vancouver Downtown Alberni, on Alberni Street in downtown Vancouver, listed in the 2026 MICHELIN Guide. Its cooking comes from Friuli in northeastern Italy, with specialties from the neighboring regions of Trentino and Veneto, and it ties British Columbia to northern Italy: mountain ranges, forests, lakes and coastal waters. Its own tagline is Italy. Pacific. Home.
The MICHELIN Guide describes a calm, elegant setting, and two private dining spaces sit on the third floor of the hotel. Many products come from the restaurant's own family farm in the Fraser Valley and from Italian importers, alongside local farmers, fishmongers, foragers and ranchers. Pasta is made fresh in-house daily and the menu is dictated by the seasons.
Cjarsons, the Friulian half-moon filled pasta the guide singles out, comes with ricotta, dried apricot, brown butter, poppy seed and smoked ricotta. Bigoli alle vongole pairs squid ink pasta with Manila clams, garlic, white wine and chili, and wild BC salmon al tartufo nero arrives under a black truffle crust with handmade gnocchi and local foraged mushrooms. At weekend brunch the Italian breakfast board for two carries prosciutto, mortadella, bresaola, soft eggs, Parmigiano, whipped ricotta and warm house focaccia.
The restaurant runs from 7:00 AM to 10:00 PM every day, across breakfast, weekday lunch, aperitivo from 2:30 PM and dinner from 5:00 PM. The guide also notes a family-style tasting option.
