SUYO Modern Peruvian · Restaurant · Vancouver

Chef Ricardo Valverde's modern Peruvian restaurant on Main Street, in the 2026 MICHELIN Guide.
SUYO Modern Peruvian is a Peruvian restaurant on Main Street in Riley Park, listed in the 2026 MICHELIN Guide. Chef and owner Ricardo Valverde, born and raised in Lima, opened it in 2022 as his first venture as both chef and owner, and his own account of the restaurant calls it Canada's first Peruvian fine dining room. Before SUYO he spent five years as chef de cuisine at Blue Water Cafe, worked at CinCin Ristorante + Bar and Diva at the Met, and was executive chef of Ancora. SUYO is the Quechuan word for homeland.
A plain exterior gives way to an interior of abundant greenery and tall plants, plush seating and elegant lighting. The restaurant organizes the room around Peruvian landscapes: the Amazonian rainforest, the Andean mountains, the Pacific tides and the coastal desert.
The menu is built on the range of Peruvian cooking, which the kitchen describes as combining the flavors of four continents. The Ceviche Bar runs hamachi tiradito with charred eggplant, avocado, nori and chalaca, and the Ceviche Afrodisiaco of sea bass, octopus, mussels, shrimp, seaweed and rocoto essence. Small plates include octopus anticuchero over roasted yam, and Kensington Farm alpaca tartare with Andean focaccia, quail egg and aji panca.
Dinner runs Tuesday through Saturday, 5:00 PM to 9:30 PM, and the MICHELIN Guide advises booking ahead because the bar fills quickly. Online reservations cover tables of up to six, and for parties of seven or more the chef curates a tasting menu.
