Sartiano's opened at Wynn Las Vegas in March 2026, in an alcove of the resort next to Zero Bond with windows over the Wynn Golf Club. It is the Las Vegas expression of Scott Sartiano's New York flagship, and the room was built to match: an arcade of arches, brass detailing and soaring vaulted ceilings drawn from mid-century Milanese design.
Three-time James Beard Award winner Alfred Portale directs the kitchen, with Michael Rubinstein as executive chef. The menu runs two lines at once, Sartiano's Neapolitan heritage alongside the signatures that made the New York room, set against a bistecca program of prime cuts and American Wagyu. Cannoli Caviar opens most tables, a crisp cannoli shell filled with whipped mascarpone, chive and Oscietra caviar. The lasagna layers housemade pasta with roasted wild mushrooms and black truffle; the agnolotti is filled with sheep's milk ricotta and finished with lamb pancetta and English peas; and the 40-ounce dry-aged bistecca fiorentina is carved tableside with porcini, peppercorn and salsa verde.
The bar works the same register. Dolce Vita is a Negroni Bianco built on two gins with bergamot and pink grapefruit cordial, and Rare Breed is a savory martini of spiced Mediterranean olive brine, roasted red pepper and black truffle, finished with a truffle salt rim.
Dinner runs Wednesday through Sunday from 5 PM, to 10 PM midweek and 10:30 PM on Friday and Saturday. The restaurant is closed Monday and Tuesday. Dress is upscale casual chic, and children under five are not admitted.
