Beverly Hills steakhouse serving 100 percent grass-fed Wagyu from First Light Farms in New Zealand.
Matu is a steakhouse at 239 South Beverly Drive in Beverly Hills, listed in the MICHELIN Guide's 2026 California selection. It is built around one supply chain: founder Jerry Greenberg became the first outside owner of the New Zealand producer First Light Farms, then opened a restaurant serving 100 percent grass-fed Wagyu from it. He runs Matu with Mike Odell, Ryan Gianola and Scott Linder, and a chef team leads the kitchen.
MICHELIN's inspector describes wood panels, exposed brick and gleaming brass, an open kitchen, and a mood closer to romantic than clubby.
Steaks are butchered every morning, so the list changes by the day, and they are cooked over wood fire to a doneness the restaurant trademarks as Warm Red, red in color and warm throughout. The rustic ribeye, 22 to 25 ounces, is the one cut the kitchen will not take past it, and a 10 oz center-cut picanha sits beside it. Away from the fire, the fazzoletti uses pasta from UOVO with a braised ragu, the twice-baked potato arrives with Kaluga caviar, and Scott's Chocolate Cake, flourless and named for Linder, closes the menu.
Lunch runs 11:30 am to 2 pm every day, and dinner from 5:30 pm Monday through Thursday, 5:15 pm Friday and Sunday and 5 pm Saturday, through to 10 pm. Reservations open one month ahead, and groups of up to 36 are accommodated as a semi-private setting within the dining room. Matu is a no-tipping restaurant, and an 18 percent fee is added in place of gratuity.
