Elcielo is chef Juan Manuel Barrientos' theater of Colombian emotion, the Medellin original that grew into a Michelin-starred group with sister rooms in Miami, Washington and Bogota. It opened in 2007 and still sets the ceiling for fine dining in the city.
The room sits inside the boutique Elcielo Hotel in the leafy Astorga pocket of El Poblado, a calm, low-lit space built for a single purpose: a four-hour tasting that Barrientos designs around neuroscience as much as flavor. He calls it the cocina de las emociones, and the courses are engineered to trigger memory and feeling, not just appetite.
Expect twelve to fifteen plates that rotate with the seasons. A few signatures return often - the Arbol de la Vida cassava course drawn from the Amazon, chicken marinated in mustard seed and beer, a liquid-nitrogen citrus sorbet finished at the table.
Then there are the rituals. The famous chocoterapia moment has guests washing their hands in warm chocolate between courses; other interludes cleanse the palate with scent and touch. It is closer to performance art than to a conventional dinner, and it is the reason people plan whole trips around a table here.
