Mar y Fuego is a personal project you can taste. Chef-owner Sergio Echeverri, named Antioquia's best chef in 2020, runs a Colombian cocina de autor built on the idea of sea and mountain, with a Caribbean accent and fish flown in directly from Bahia Solano on the Pacific coast.
That provenance is the whole point. In a city far from either ocean, having a named chef fly in his own Pacific catch is what separates Mar y Fuego from the bigger, glossier operations nearby - this is single-authorship cooking, not a concept.
The signatures earn their reputation: the Ceviche Coral, dressed with a house tartar, uchuva teriyaki and chicharron powder; a white-fish tiradito; a tartar of fresh tuna; the lomo aborrajao; and a charcoal octopus that regulars order on sight.
The room is intimate and personalized, with a few distinct areas, live music and a warm, unpretentious Caribbean feel. It is sophisticated without trying too hard, and it rewards a slow dinner rather than a quick bite.
