Matsuhisa Mykonos brings Nobu Matsuhisa's New Style Japanese cooking to the Belvedere Hotel in the School of Fine Arts district of Mykonos Town, with the dining room set beside the hotel's pool. It opened in 2003 in a converted mansion dating to the mid-19th century, and it has been part of the island's summers ever since, with dinner running from the blue hour into a long Aegean evening.
The kitchen follows the style Matsuhisa developed after opening his first restaurant in Peru in 1972: Japanese technique shaped by South American and European influences. Rock shrimp salad, yellowtail jalapeno, white fish dry miso, salmon karashi su miso and sashimi salad all appear, alongside daily specials built around Greek fish and seafood brought in straight from the Aegean.
Chef Matsuhisa himself visits during the summer, most notably for the annual Nobu Food Festival, and on those evenings he likes to move among the tables and meet the guests in person.
Tables can be booked for seatings from 7 PM until midnight.
