Matsuhisa Saint-Tropez is Nobu Matsuhisa's seasonal outpost on the terrace of Airelles Chateau de la Messardiere, a 19th-century palace set high in the pine-covered hills above the town. The dining room is really the view: umbrella pines frame a long sweep of the Bay of Pampelonne, and the tables sit under a white pergola with the Mediterranean opening up below.
The kitchen follows the "new-style" repertoire Chef Nobu built during his formative years cooking in Lima, where Japanese technique met Peruvian heat. Signatures include salmon-sashimi tacos, wagyu fillet with three sauces, royal crab tempura with amazu ponzu, and the new-style sea bass in a green chili and jalapeno sauce. The robata grill lends a wood-fired char, and dessert runs to Nobu cheesecake and iced mochi.
