Matsuhisa Saint-Tropez is Nobu Matsuhisa's restaurant on the terrace of Airelles Chateau de la Messardiere, a 19th-century palace set high in a park of umbrella pines above the town. The dining room is really the view: guests settle onto sand-colored banquettes with the Bay of Pampelonne opening up below.
The kitchen follows the Japanese-Peruvian repertoire Chef Nobu built after moving to Peru at 24, where he learned to cook Japanese dishes with local produce. Signatures include fresh salmon sushi, wagyu beef fillet with three sauces and royal crab tempura with amazu ponzu. The robata grill lends a wood-fired, smoky char to meat, fish and vegetables, and dessert runs to Nobu-style cheesecake, iced mochi or a cappuccino with Suntory whisky.
This is a glamorous room. Live DJ sets play every summer evening, and the early evening on the terrace, a drink in hand with the sun still on the bay, is the moment to book for. The bar keeps its own cocktail list, from a wagyu fat-washed whisky to a pisco drink with basil, shiso and calamansi caviar.
