Born in Dubai in 2018 from restaurateur Evgeny Kuzin and chef Izu Ani, the brand has grown into an international group with rooms in London, Monte Carlo, Miami, Mykonos and beyond. This is Gaia's debut on the French Riviera, and it lands as a full summer residency rather than a quiet satellite. The cooking is contemporary Greek by way of the wider Mediterranean, curated by Izu Ani with chef Orestis Kotefas, and it carries the same easy, sun-first sensibility that turned the original into a destination. Expect the room to hum on high-season evenings, when Gaia's terrace is one of the addresses people angle for.
The philosophy is simple and hard to do well: pristine seasonal produce, familiar recipes, and real depth of flavour rather than reinvention for its own sake. Lunch leans bright and raw, all vibrant salads and mezze, while dinner brings out the richer, more generous side of the kitchen. Much of the menu is built for the middle of the table, to be pulled apart and shared.
The signatures give you the measure of the place. The sea bream carpaccio is a benchmark, the Choriatiki is the classic Greek salad done properly, and there is baked feta psiti alongside grilled octopus, chtapodi sti schara, straight from the coals, with raw and grilled fish at the heart of the carte, meant to be passed around the table.
For 2026 Gaia takes up residence at La Tartane, the five-star boutique hotel set on the Route des Salins, midway between the village and the legendary Salins beaches. La Tartane was reimagined in the spirit of a Provencal family home - all Mediterranean art de vivre and quiet contemporary polish - and Gaia sits right at its heart.
