Gaia Saint-Tropez is the summer pop-up of the Greek restaurant created in Dubai in 2018 by chef Izu Ani, which also has addresses in Monte-Carlo, London, Doha, Marbella, Miami and Bodrum. For the 2026 season it has taken over the restaurant at La Tartane, the five-star hotel on the Chemin des Salins between the village and the beaches.
The menu is curated by Izu Ani with chef Orestis Kotefas and rooted in Greek Mediterranean tradition, with seasonal ingredients, familiar recipes and depth of flavor. The sea bream carpaccio comes with lemon, mandarin and truffle, the Choriatiki is the classic Greek salad with barrel-aged feta, and the baked feta psiti arrives with honey, nuts and filo, alongside grilled calamari, prawns saganaki and a caviar selection.
Fish is at the heart of the menu. A fish market of dentex, red mullet, royal sea bream, turbot, lobster and langoustines is sold by weight, and the chefs suggest raw, pan-fried, grilled or harissa preparations for each catch. Truffle rigatoni, lobster pasta, lamb cutlets and a Wagyu rib eye from the charcoal oven round out the table.
La Tartane is laid out as a Provencal hamlet of small houses around a Mediterranean garden, and Gaia sits beside the pool, open to the sky. Daytime service is for hotel guests, and in the evening the restaurant opens to everyone. Dress is smart elegant, with no shorts or open-toe shoes for gentlemen.
