Colette is the gastronomic restaurant of Hotel Sezz, the five-star design hotel on the Route des Salins in Saint-Tropez, 250 meters from Plage des Canebiers. It holds one star in the 2026 MICHELIN Guide France and takes its name from the French novelist Sidonie-Gabrielle Colette.
The hotel was conceived by designer Christophe Pillet and built into an existing park, and the dining terrace looks out over the pool between olive and palm trees. Inside, the room is bright and minimalist, bathed in the golden light of the Riviera. In the evening the pool throws soft reflections across the terrace, and large windows let diners watch the kitchen at work.
Chef Philippe Colinet cooks pure, plant-forward Mediterranean food around local, seasonal produce, working closely with growers, fishermen and breeders of the Gulf of Saint-Tropez. Dinner centers on two tasting menus, Substances in five acts and Sense in seven, with an a la carte alongside. The current menu includes Saint-Pierre with basil and kale, pigeon with watermelon and beetroot, and cauliflower with caviar and curry.
A chef's table sits behind a glass window onto the kitchen, at a table signed by Christophe Pillet. Colette serves dinner only, from 7:30 to 9:30 p.m., Thursday to Monday in May, June, September and October and Wednesday to Sunday in July and August, with live music on Monday evenings. Dress is casual chic.
