Gaio is the restaurant, cabaret and club in the former Papagayo on the Saint-Tropez port, overlooking the harbor and the village from Rue du 11 Novembre 1918. The kitchen cooks Nikkei, the fusion of Japanese cuisine and Peruvian gastronomy, and as the night goes on the room turns from dinner into a club.
Sharing plates lead the menu. Gyoza come with chicken, Wagyu or vegetables, crispy rice is topped with salmon tartare, and the raw bar offers a ceviche clasico of John Dory with leche de tigre and a tiradito Nikkei of bluefin tuna with ponzu. Sushi runs from nigiri of Wagyu, flamed salmon and bluefin tuna to maki such as the acevichado and the Gaio roll with bluefin tuna, fried shrimp and flamed foie gras.
Mains come off the anticucho grill, including octopus with red anticuchera salsa and chimichurri, alongside beef tenderloin, picanha, a tomahawk with truffle mashed potato and a fish of the day with Nikkei beurre blanc. The bar pours the Pisco Panda with ginger-infused pisco and passion fruit, the Lotus Sour and a Dry Sake Martini.
Cabaret performers punctuate dinner before Gaio becomes a club, with guest DJs through the summer. Doors open every night at 9 p.m. and the club runs until 5 a.m.
