Diego Pops is Old Town Scottsdale's playful take on modern Mexican, a from-scratch kitchen inspired by taco and tequila-fueled conversations on the beaches of the Yucatan. It lives inside the walls of a historic Southwestern pottery shop on Scottsdale Road, and the room leans into that history with an open kitchen, playful decor, and an extended outdoor patio. The food is the reason it endures. The kitchen puts a modern, playful twist on Mexican favorites, and the Brussels Sprout Nachos are the dish everyone orders and talks about: Brussels sprouts built with street corn queso, queso oaxaca, fresno chili, pickled onion, roasted garlic beet crema, and a fried egg. Around them run classic and re-imagined tacos from al pastor to crispy cod, fresh guacamole, ceviches, and a seasonal watermelon salad, all made in-house and built for sharing.
The bar carries equal weight, anchored by the Diego Margarita made with 1800 Blanco tequila.
