Fat Ox is chef Matt Carter's modern Italian flagship, set on the corner of Scottsdale Road and Lincoln Drive just north of Old Town Scottsdale. Carter, Phoenix-born and classically trained, built the room around one obsession: pasta made the traditional Italian way, extruded and sheeted in house daily and finished with premium imported and seasonal ingredients rather than heavy red sauce.
The space sets the tone. A dark, sultry dining room trades on rich textures and low light, opening to a spirited bar and a courtyard patio that comes alive in Scottsdale's temperate months, equal parts date-night destination and celebration room. The cooking leans on a custom hearth, with slow-roasted meats, wild fish, and seafood worked over wood and charcoal for depth and smoke.
