It was made famous by chef Beau MacMillan, who cooked here for 23 years. Today the seasonal menus are inspired by the natural elements of earth, fire, water and air, built on local and organic produce and sustainable meat and seafood.
The draw is the setting. The dining room looks out over Paradise Valley, and dinner runs daily from 5:30 PM to 9 PM, so a table at sunset is an easy plan. Elsewhere on the property, Jade Bar pours cocktails made with farm-fresh ingredients from a shaded patio and floor-to-ceiling windows that frame the mountain views; it is walk-in only and open daily from 11 AM to 10 PM.
At dinner, the raw bar runs from oysters and sashimi selections to a seafood platter of snow crab claws, lobster tail, shrimp and tuna poke. Starters include a caviar cone and iberico pork carnitas with mole verde, and entrees run to a prime filet with brown butter mash and port reduction, a 14oz American Wagyu ribeye with foie gras butter and port-braised Wagyu beef cheeks.
The day starts earlier, too. Breakfast is served from 7 AM to 11 AM, with avocado toast, acai bowls and eggs Benedict, and lunch from 11 AM to 2 PM brings poke bowls, crab cakes and steak frites.
