Elem is one of the boldest arrivals on Main Street, a restaurant and cocktail lab at 2110 Main from chef Vish Mayekar and the team behind Zarak, including co-owner and beverage director Winnie Sun. It is listed in the Michelin Guide, and critics have called it a distinctly un-Vancouver kind of dining experience: big flavors, global spice, and pitch-perfect technique on the plate.
Opened in 2024 on Main Street, Elem earns its split billing. Sun runs a zero-waste cocktail lab that turns overlooked ingredients, like fruit peels and leftover spices, into layered drinks. Chef Mayekar's menu explores flavor and spice from Bangkok to California, Spain, Mexico, Italy and Mumbai, filtered through his travels and his Indian heritage.
Order a la carte or hand the kitchen the wheel with the surprise tasting menu, Let Us Cook for You, priced at 98 or 125 dollars a person. Signatures include the Yellowfin Tuna Bhel, built on cilantro-mint chutney, puffed rice and semolina crackers, and grilled lamb skewers finished with a medjool date glaze, ginger labneh and buckwheat. The menu moves with the season and the chef's whims, so treat these as house style.
Dinner is the moment here, and surrendering to the tasting menu is the move, though the a la carte is fully open if you would rather steer your own order. The restaurant takes bookings up to 30 days ahead, and walk-ins are welcome.
