Gary's is a 36-seat neighbourhood room in South Granville, at 1485 West 12th Avenue, that delivers serious cooking without the special-occasion price tag. Opened in late 2023 by chef Matthew Bishop and Bailey Hayward, it earned a Michelin Bib Gourmand, the guide's nod to great quality at great value, and landed on several of Canada's best-new-restaurant lists in 2024. It is small, warm, and genuinely one of the hardest little tables in the city to land.
Built around an open kitchen, the room is exactly what its owners call it, 'a nice place for nice people.' The cooking is rustic, seasonal, and rooted in French-country technique, served as small shareable plates that let a table graze widely. The kitchen works closely with local farms and manipulates its ingredients as little as possible,
