New French meets West Coast in historic Gastown
L'Abattoir sits at No. 1 Gaoler's Mews in historic Gastown, on the corner where Vancouver's first jail and the old meat-packing district once stood. The name nods to that gritty past, but the room is anything but rough: a restored 19th-century brick-and-beam building layered with classic French tile, warm wood, blackened steel, and a light-drenched glass atrium at the back.
Executive chef Jasper Cruickshank leads a kitchen that blends French technique with West Coast ingredients. The a la carte menu runs from baked Pacific oysters with whipped garlic butter and black truffle to steak tartare with chutoro, wild BC halibut, Fraser Valley duck leg confit, and a dry-aged Black Angus ribeye for two with bone marrow and peppercorn sauce, with a chef's tasting menu offered alongside.
