Award-winning Roscoe Village deep dish from a 50-year family recipe
Bartoli's is one of the most decorated deep-dish pizzerias in Chicago, and its recipe runs straight through the city's pizza history. Owner Brian Tondryk revived the deep-dish recipe of his grandfather Fred Bartoli, a co-founder of Gino's East, and opened this Roscoe Village pizzeria in 2013 to perfect it. The honors piled up quickly, including Best Pizza in Chicago from the Tribune in 2016, Food & Wine in 2017, and USA Today in 2019.
The signature is a deep dish built on that 50-year-old family recipe: a house-made spinach-and-cheese layer over creamy mozzarella, finished with house sauce. The room is a small, brick-walled neighborhood Italian pizzeria, low-key and local, without the tourist crush of the downtown deep-dish institutions.
